Baking sheet pans can be found in virtually every commercial kitchen and are commonly used for baking cookies, dinner rolls, biscuits and endless other food items. They are usually available in stainless steel or aluminum and come in three typical sizes and gauges. Sizes include full size (18" x 26", too big for residential ovens), half size (18" x 13" may fit in some residential ovens) and quarter size (9" x 13" fits most residential ovens). In terms of metal gauge, the lower the number the better quality material.
